Coffee myths and disputed claims

Coffee attracts a lot of confident-sounding claims. Each card below states what's actually supported, what's misleading, and — just as importantly — what's genuinely uncertain rather than forcing a simple true/false verdict where the real answer is more nuanced.

This is general information, not personal medical advice. Associations found in research are not guarantees for any individual, and evidence can change — see coffee health and caffeine for fuller topic-by-topic detail on the health-related claims below.

Outdated

Coffee dehydrates you.

Coffee has a mild diuretic effect, but for habitual drinkers it still contributes meaningfully to daily fluid intake rather than causing net dehydration.

What's true

Caffeine has a measurable mild diuretic effect, especially in people not used to it.

What's misleading

That this diuretic effect makes coffee dehydrating overall — for regular drinkers at moderate intake, the fluid from the drink itself outweighs the mild diuretic effect.

Important context

Very high intake, or a body unaccustomed to caffeine, may tip the balance more than typical daily coffee drinking.

Current evidence

Current nutrition and health guidance generally counts coffee toward daily fluid intake rather than treating it as fluid-negative for regular drinkers.

Disproven

Coffee stunts children's growth.

No good evidence supports this — it appears to originate from early-20th-century marketing rather than a demonstrated mechanism.

Current evidence

No established mechanism or reliable modern evidence links coffee consumption to reduced height. Separate, legitimate reasons exist to limit caffeine for children (sleep, anxiety, sensitivity), but growth stunting isn't one of them.

Where the belief came from

Widely traced to early cereal-based coffee-substitute marketing campaigns, which promoted their products partly by discouraging children's coffee consumption.

Misleading

Dark roast coffee has more caffeine than light roast.

By weight, roast level has little effect on caffeine; by volume/scoop, light roast can have slightly more since beans lose mass (not much caffeine) as they roast darker.

What's misleading

Roast colour is popularly treated as a caffeine indicator; it mostly is not.

Current evidence

Caffeine content is driven far more by species, dose and brew method than by roast level. A given weight of beans has roughly similar caffeine regardless of roast; measured by volume/scoop, darker roasted beans (lighter, more expanded) may deliver slightly less caffeine per scoop than the same volume of denser light-roast beans.

Misleading

Espresso always contains more caffeine than filter coffee.

Per serving, a typical filter coffee (larger volume) often contains more total caffeine than a single espresso shot, even though espresso is more concentrated per millilitre.

Important context

Espresso has more caffeine per millilitre; filter coffee usually has more caffeine per typical serving, because the serving is much larger.

Current evidence

Serving-size differences matter more than brew method for total caffeine per cup in most real-world comparisons.

Misleading

Strong-tasting coffee always contains more caffeine.

Perceived strength is mostly about extraction and roast character, not caffeine — a smoother, darker-tasting cup is not reliably higher in caffeine than a brighter, milder-tasting one.

Current evidence

Caffeine is largely flavourless; taste intensity is driven by extraction, roast level and ratio, which don't map reliably onto caffeine content.

Misleading

Decaf coffee has no caffeine at all.

Decaf retains a small amount of residual caffeine — typically a few milligrams per cup, not zero.

Current evidence

Regulatory decaffeination thresholds generally require removal of the large majority (often 97%+) of original caffeine, not 100%.

Disproven

Drinking coffee sobers you up after alcohol.

Caffeine can make you feel more alert, but it does not lower blood alcohol concentration or reverse alcohol's impairment of judgement and coordination.

What's misleading

Feeling "more awake" is mistaken for actually being less impaired.

Current evidence

Alcohol metabolism proceeds at a roughly fixed rate regardless of caffeine intake; impairment (reaction time, judgement, coordination) is not reliably reversed by caffeine.

Outdated

Coffee causes stomach ulcers.

Most peptic ulcers are caused by H. pylori infection or NSAID use, not coffee — though coffee can worsen symptoms in people who already have digestive irritation.

Current evidence

Medical understanding shifted substantially once H. pylori's role was established. Coffee is not considered a primary cause of ulcers in current clinical understanding, though it may aggravate existing digestive discomfort in some people.

Depends on context

Coffee causes heart disease.

Current observational evidence generally does not show moderate coffee consumption increasing cardiovascular disease risk for most healthy adults, though individual sensitivity, existing conditions and very high intake change the picture.

Important context

People with certain heart-rhythm conditions or high caffeine sensitivity may be advised differently by their own clinician.

Current evidence

Large observational studies have generally not found moderate coffee intake to increase cardiovascular risk in the general population; this is association-based evidence, not a guarantee for any individual, and does not apply to unfiltered/boiled coffee's cholesterol effects (a separate, real consideration).

Depends on context

Coffee is bad for everyone with high blood pressure.

Caffeine can cause a short-term rise in blood pressure, more so in people who don't drink coffee regularly, but habitual moderate drinkers often show a smaller effect. Individual clinical advice varies.

Important context

People with uncontrolled hypertension or specific cardiac conditions should follow their own clinician's guidance rather than a general rule.

Current evidence

Acute caffeine intake is associated with a measurable but usually modest and temporary blood-pressure rise; tolerance develops with regular use in many people.

Depends on context

Coffee always causes anxiety.

Caffeine can trigger or worsen anxiety symptoms in sensitive individuals, especially at high doses, but does not universally cause anxiety in everyone who drinks coffee.

Current evidence

Individual caffeine sensitivity varies substantially; dose, existing anxiety conditions, and consumption on an empty stomach or with sleep deprivation are all documented contributing factors.

Misleading

Coffee is addictive in the same way as illicit drugs.

Caffeine causes physical dependence and mild withdrawal symptoms, but its dependence profile and health/social harms are not equivalent to substances classified as having high abuse potential.

Current evidence

Caffeine withdrawal (headache, fatigue, irritability) is a recognised, real phenomenon, but caffeine dependence is generally considered mild relative to substances with high abuse/harm potential.

Depends on context

Coffee consumed early in the day never affects that night's sleep.

Caffeine's half-life (roughly 3-7 hours in most adults, longer for some) means morning coffee is unlikely to affect sleep for most people, but individual metabolism varies enough that this isn't universal.

Important context

Slow caffeine metabolisers, older adults, and people who are simply more sensitive may still be affected by earlier intake.

Current evidence

Caffeine half-life varies by individual genetics, liver function, smoking status and pregnancy; a single fixed cut-off time doesn't apply to everyone.

Depends on context

Coffee always improves concentration and focus.

Caffeine reliably increases alertness in people who are tired, but does not substitute for adequate sleep and can impair focus in people who become jittery or anxious at higher doses.

Current evidence

Alertness benefits are best documented in sleep-deprived individuals; benefits plateau and side effects (jitteriness, anxiety) can emerge at higher doses.

Unsupported

Coffee burns fat / causes meaningful weight loss.

Caffeine has a small, short-term effect on metabolic rate, but this does not translate into meaningful, sustained fat loss on its own.

Current evidence

Any metabolic-rate effect from caffeine is small and does not, by itself, produce clinically meaningful weight loss; marketing claims for "fat-burning" coffee products substantially overstate the underlying evidence.

Misleading

Coffee prevents disease.

Several observational studies show associations between coffee consumption and lower risk of some conditions, but "associated with lower risk" is not the same as "prevents" — coffee is not a treatment or preventive medicine.

Outdated

Coffee causes cancer.

Major health bodies have moved away from classifying coffee as a cancer risk; some research even associates moderate coffee consumption with lower risk of certain cancers, though this is observational, not proof of protection.

Current evidence

Coffee was previously classified with more caution by some bodies; that classification was later revised as more evidence accumulated. Current general guidance does not treat moderate coffee drinking as a cancer risk for most people.

Misleading

Coffee is naturally calorie-free no matter how it's prepared.

Black coffee itself is very low in calories, but milk, cream, sugar and flavoured syrups added to many café drinks contribute substantial calories.

Current evidence

A large milk-and-syrup-based coffee drink can contain several hundred calories, almost entirely from the additions, not the coffee itself.

Misleading

Instant coffee is not real coffee.

Instant coffee is made from real brewed, roasted coffee that has had its water removed — it goes through additional industrial processing, but it is not a synthetic substitute.

Misleading

Robusta is always low-quality coffee.

Robusta has historically been associated with lower-grade commodity coffee, but well-grown, well-processed specialty-grade robusta exists and is increasingly recognised in the specialty industry.

Important context

Most commercially available robusta is used in cheaper blends and instant coffee, which shaped the reputation, but that reflects typical market use, not a fixed ceiling on the species.

Current evidence

Specialty-grade robusta programmes and competitions have emerged specifically to challenge this generalisation.

Misleading

Oily-looking beans are fresher.

Bean oiliness mostly indicates roast level (darker roasts bring more oil to the surface) and to some extent degassing time — not freshness on its own, and very old beans can also look oily as cell structure breaks down.

Current evidence

Oiliness is primarily a roast-level phenomenon; roast date, not surface oil, is the reliable freshness signal.

Misleading

Crema thickness proves espresso quality.

Crema volume is influenced by bean freshness, roast level and robusta content, among other things — a thick crema does not reliably indicate a well-extracted, good-tasting shot.

Current evidence

Very fresh, undegassed coffee and robusta-heavy blends both tend to produce more crema somewhat independent of extraction quality.

Unsupported

Coffee should be stored in the fridge.

A fridge's humidity and odours from other food can degrade coffee faster than a cool, dark, airtight cupboard.

Current evidence

The condensation coffee experiences each time it's removed from and returned to a fridge introduces moisture, a documented freshness risk; a fridge is not the same as proper airtight, dark, cool pantry storage.

Depends on context

Freezing coffee always ruins it.

Long-term freezing in a genuinely airtight container, with minimal repeated thawing, is a reasonable way to extend shelf life; poorly sealed or repeatedly thawed coffee can pick up moisture and freezer odours.

Important context

Portioning before freezing (so you don't repeatedly thaw and refreeze the whole bag) matters more than whether freezing is used at all.

Outdated

Espresso should always take exactly 25-30 seconds.

Shot time is one signal among several (dose, yield, taste) — a fixed universal time target doesn't account for different beans, ratios and roast levels.

Current evidence

Modern specialty-espresso practice generally treats time as a diagnostic alongside taste, dose and yield, not a fixed target to hit regardless of the coffee.

Misleading

A pressure gauge reading proves good extraction.

Pressure is only one variable among grind, dose, distribution and time — a correct gauge reading doesn't guarantee a well-extracted, good-tasting shot.

Current evidence

Espresso quality depends on the interaction of multiple variables; pressure alone doesn't capture channelling, uneven distribution or grind problems.

Misleading

More expensive equipment guarantees better coffee.

Technique, grind consistency, freshness and recipe usually matter more than price once basic equipment quality is met — expensive equipment offers convenience and consistency, not an automatic taste ceiling increase.

Current evidence

Skilled use of modest equipment routinely outperforms careless use of expensive equipment in blind comparisons reported across the specialty coffee industry.

Misleading

Single origin is always better than a blend.

Blends are deliberately designed for balance and consistency and can be excellent; single origins highlight a specific character but aren't automatically higher quality.

Current evidence

Quality depends on the specific beans, processing and roasting, not on "single origin" versus "blend" as a category.

Marketing claim

Kopi luwak is automatically the best coffee in the world.

Kopi luwak's reputation rests on novelty and price, not demonstrated superior taste in blind evaluation — and much commercial kopi luwak involves serious animal-welfare concerns from caged civets.

Current evidence

No reliable evidence establishes kopi luwak as objectively superior in cup quality; its high price reflects scarcity/novelty marketing more than demonstrated quality.

Unsafe claim

Coffee enemas detoxify the body.

No credible evidence supports coffee enemas as a detox method, and they carry real, documented safety risks.

Current evidence

The body's liver and kidneys handle detoxification; there is no established mechanism by which a coffee enema improves this. Reported harms include burns, infections, electrolyte imbalances and bowel injury.

Unsupported

Green coffee extract supplements cause meaningful weight loss.

Marketing claims for green coffee extract weight-loss supplements substantially outstrip the underlying evidence, some of which has faced scientific-integrity concerns in the past.

Current evidence

Any effect size shown in available research is small and not well-established as clinically meaningful; well-known past marketing claims for this category have faced regulatory action for overstatement.

Marketing claim

Mushroom coffee delivers all its advertised health benefits.

Functional-mushroom ingredients (e.g. lion's mane, chaga, reishi) have some early or traditional-use evidence for various claims, but the specific doses in commercial mushroom-coffee blends are often small, and marketing claims generally outpace rigorous evidence.

Misleading

"Italian roast" means the coffee came from Italy, and "French roast" means it came from France.

Both are roast-level names (very dark) describing how the beans were roasted, not where the green coffee was grown — coffee isn't grown in Italy or France at all, since neither has a coffee-growing climate.

Current evidence

"Italian roast" and "French roast" are conventional dark-roast-level names used by roasters in various countries; they describe roast degree, not origin.

Misleading

"Espresso roast" is a distinct type or species of bean.

"Espresso roast" describes a roast style (typically medium-to-dark, developed for espresso brewing), not a separate bean species or variety — almost any coffee can be roasted for espresso.

Current evidence

Depends on context

Arabica always has less caffeine than every Robusta coffee.

Robusta typically contains roughly double the caffeine of arabica on average, but "always" overstates it — actual caffeine content varies by specific variety, growing conditions and processing, so individual samples can vary around the typical species difference.

Important context

The species-level generalisation (robusta usually higher) is well supported; the absolute "always, every sample" framing is not.

Current evidence

Disproven

Coffee loses all its caffeine during roasting.

Caffeine is a heat-stable compound and survives roasting largely intact — roast level has only a small effect on caffeine content compared to species, dose and brew method.

Current evidence

Caffeine's melting/decomposition point is well above typical roasting temperatures reached by the bean itself; measured caffeine content across roast levels differs only modestly.

Outdated

Espresso tamping must use an exact, fixed pressure (e.g. precisely 30 lb/13.6 kg).

Consistency of tamping (level, even pressure shot to shot) matters far more than hitting one specific numeric pressure — modern specialty consensus has moved away from the once-popular fixed-number rule.

Current evidence

Widely discussed shift in specialty-coffee training away from a fixed tamp-pressure target toward consistency and puck preparation quality as the real levers.

Misleading

More bars of pump pressure always means better espresso.

9 bar became a common target because it works well with typical grind/dose/temperature combinations, not because higher pressure is inherently better — many well-regarded machines and pre-infusion approaches deliberately use lower effective pressure at some point in the shot.

Current evidence

Espresso quality depends on the interaction of pressure with grind, dose, distribution and temperature, not pressure in isolation — consistent with CoffeeHQ's pressure-gauge myth entry.

Misleading

Bean-to-cup machines cannot produce good coffee.

Modern bean-to-cup machines can produce good, consistent coffee when fresh beans, correct grind and clean equipment are used — convenience and full manual control are a genuine trade-off, but that's different from a fixed quality ceiling.

Depends on context

Pod and capsule coffee is always weak.

Strength depends on the specific capsule and drink-size setting chosen — many systems offer stronger/ristretto-style capsules and shorter extraction settings that produce a notably stronger result than a long, diluted setting.

Depends on context

Water straight off the boil always "burns" coffee instantly.

Off-the-boil water is genuinely too hot for some lighter, more delicate coffees and methods, but many brewing guides (including moka pot and some dark-roast recipes) call for water very close to boiling deliberately — it's about matching temperature to the coffee and method, not a universal hazard.

Current evidence

Unsupported

Reheating or microwaving coffee is unsafe or "poisonous".

Reheating coffee affects flavour (often for the worse) but is not a food-safety hazard in the way the word "poisonous" implies — ordinary food-safety practice (don't leave it at room temperature for many hours first) is the same as for any other beverage.

Current evidence

No credible mechanism supports reheated coffee becoming toxic; the claim appears to conflate taste degradation with a safety hazard.

Unsupported

Coffee grounds safely and effectively repel slugs and other garden pests.

Evidence for a reliable pest-repelling effect is weak and inconsistent — treat this as an unproven folk practice, not a dependable pest-control method.

Misleading

Coffee cures constipation.

Coffee has a genuine, documented mild laxative/motility effect for many people, but that's different from being a reliable "cure" for constipation as a condition — persistent constipation has many possible causes coffee doesn't address.

Unsupported

Coffee cleanses or detoxifies the liver.

The liver's own function is to process and remove toxins; coffee does not add a separate "cleansing" or "detox" mechanism, despite some observational research on coffee and liver disease markers (a separate, more limited finding — see CoffeeHQ's disease-risk overview).

Current evidence

"Detox" framing generally has no established mechanism, the same reasoning CoffeeHQ applies to coffee-enema and other detox claims.

Misleading

Decaf is always made from inferior-quality beans.

Decaffeination is a process applied to green coffee of any quality level — specialty-grade decaf exists, though historically decaf has been a smaller, sometimes lower-priority market segment for some roasters, which may affect bean selection in practice at some (not all) roasters.

Current evidence

Depends on context

Cold brew is always less acidic than hot coffee, and always contains more caffeine.

Cold brew is often perceived as less acidic/smoother due to different extraction chemistry, and concentrate is often stronger than typical hot coffee — but both depend heavily on ratio and dilution, so neither claim holds universally once serving strength is accounted for.

Important context

A cold-brew concentrate diluted heavily can easily have less caffeine per serving than a strong hot coffee; perceived acidity also varies by bean and steep time, not just brew temperature.

Disproven

Coffee is completely free from acrylamide.

Roasting coffee does produce acrylamide (a compound that forms naturally when many foods are heated at high temperature), at levels food-safety regulators have studied and set guidance around — this is not unique to coffee, and current regulatory assessments have not required special coffee-specific consumer warnings in most jurisdictions.

Current evidence

Food-safety regulators in several jurisdictions have assessed dietary acrylamide (from coffee, baked goods, fried foods and others) as part of general food-safety monitoring.

Depends on context

Washed process coffee is always cleaner-tasting, and natural process is always sweeter.

These are genuine general tendencies (washed processing does tend to produce a cleaner, brighter cup; natural processing does tend to add fruit-forward sweetness) but processing quality, bean, climate and drying execution can easily override the tendency — a poorly executed natural can taste worse than a well-executed washed coffee and vice versa.

Misleading

Coffee grown at higher altitude is always better quality.

Higher altitude is generally associated with slower cherry maturation and often more complex acidity, a real tendency — but altitude alone doesn't guarantee quality, which also depends on variety, processing, farming practice and roasting.
