Coffee techniques

Things you do, rather than things you read about. Each one states what it is for, what a good result feels like, and what to change when it does not work.

A technique here is deliberately narrow: one skill, one goal, one set of adjustments. Steaming milk and judging its temperature are separate pages because they fail separately and are fixed separately. Where a page could only tell you what to do without telling you how to know it worked, it is not here yet.

Make better milk drinks

You have an espresso machine and your cappuccinos are not what you hoped.

Almost every milk fault comes down to two things: how the air went in, and how hot it got. This path covers both, then the equipment and the milk that make them easier.

Improve your espresso

Your shots are inconsistent and you cannot work out which variable is moving.

Espresso rewards changing one thing at a time. This path goes in the order the coffee itself travels — grinder, dose, distribution, tamp, extraction — so each step makes the next one readable.

Improve your filter coffee

You brew pour-over or drip and want it to be the same good cup twice.

Filter brewing is forgiving enough that every change is legible, which makes it the best place to learn how the variables behave.

  1. A scaleThe cheapest thing that makes a brew repeatable.
  2. The kettleWhen the spout matters, and when it genuinely does not.
  3. Rinsing the filterTen seconds that do three useful things.
  4. BloomingLetting the gas out before it pushes the water away.

Keep the machine working

Your coffee has dulled, or the machine is slower than it was.

Two separate jobs get confused constantly. Cleaning removes coffee residue; descaling removes mineral scale. Doing one does nothing for the other.

  1. BackflushingCoffee oils out of the group. Only on machines with a three-way valve.
  2. DescalingScale out of the boiler, on a schedule set by your water.
  3. Test your waterEvery other water decision depends on this number.
