Microfoam is not more foam or less foam. It is foam with a bubble size small enough that the milk stops looking like foam at all.

Why it works this way
The word gets used loosely, so it is worth being precise. Microfoam describes a bubble structure, not a quantity: the same volume of air, sheared into far smaller and more uniform bubbles and distributed evenly through the milk rather than floating on top. The visible test is that it does not look like foam. A jug of microfoam has the sheen of wet paint and moves as a single body; a jug of ordinary froth has a distinct pale cap and a visibly different liquid beneath it. The difference matters because only microfoam pours as a controllable stream, which is why latte art is impossible without it and why a cappuccino made with it tastes creamy rather than airy.

How to do it
Add slightly less air than you think you need, in the first few seconds only.
Microfoam has a modest amount of air, finely divided. Excess air cannot be sheared away later.
Submerge the tip and establish a fast, stable whirlpool.
The shearing forces at the tip and in the vortex are what divide the bubbles. This phase is where microfoam is actually made.
Hold the whirlpool until the surface loses its texture and turns glossy.
You are watching for the moment the milk stops looking bubbly and starts looking wet.
Swirl in the jug after stopping, and pour without delay.
Microfoam separates as it stands, like any foam. Swirling delays it; time defeats it.
How to tell it worked
A uniform, glossy surface with no visible individual bubbles, that ripples rather than wobbles when the jug is moved. Poured into a cup it disappears into the coffee rather than sitting on it.

Surface still shows individual bubbles
Change: Extend the whirlpool phase and check the tip is deep enough to drive it.
The vortex is the shearing mechanism. Bubbles survive when it is weak or short.
Texture is right but there is too little of it for a cappuccino
Change: Add air for slightly longer at the start, keeping the whirlpool phase the same.
Volume and bubble size are set at different stages, so they can be adjusted separately.
Plant milk will not reach a glossy surface
Change: Try a barista-formulated version of the same milk before changing technique.
Foam structure in plant milks depends heavily on added stabilisers, which standard formulations lack.
Common mistakes
Equating microfoam with a lot of foam
Over-aeration, which no amount of whirlpool will fix.

Judging the milk in the cup rather than the jug
The fault is invisible until it is too late to correct.
Instead: Look at the surface in the jug before pouring; it should be glossy and flat.
