Why it works this way

Steaming is two jobs done in one movement, in a fixed order. First you add air, which only works while the milk is cold. Then you stop adding air and set the milk spinning, which breaks the bubbles you just made down into something fine enough to pour. Getting the order right is most of the technique; getting the stopping point right is nearly all of the rest. Almost every fault people describe — no foam, huge bubbles, milk that separates in the cup — traces back to one of those two.

How to do it

  1. Purge the wand into the drip tray for a second.

    Steam wands hold condensed water. Purging clears it so you are adding steam to the milk rather than water.

  2. Fill a cold jug to between a third and a half with cold milk.

    The milk roughly doubles in volume. Below a third and the wand tip cannot reach the surface properly; above a half and it goes over the rim.

  3. Set the tip just below the surface and open the steam fully.

    Full steam from the start. Feathering the valve produces a weak flow that heats without texturing.

  4. Add air for the first few seconds, listening for a regular light tearing sound.

    A steady soft hiss means air is being drawn in evenly. A loud irregular screech means the tip is too high and you are adding large bubbles.

  5. Lower the jug slightly so the tip submerges, and angle it to set the milk spinning.

    This is the texturing phase. The whirlpool shears the bubbles you added into progressively smaller ones and folds them through the milk.

  6. Stop when the jug is uncomfortably hot against your palm.

    Roughly 55-65°C is the range commonly used for serving. Past that, texture coarsens and the sweetness falls away.

  7. Purge and wipe the wand immediately, then knock and swirl the jug before pouring.

    Knocking bursts any surviving large bubbles; swirling keeps the foam and liquid combined until they reach the cup.

How to tell it worked

Glossy, wet-paint-looking milk with no visible bubbles, that swirls as a single body in the jug. It should look like liquid, not like foam.

If it did not work

What you saw, what to change, and why the change works.

  • Little or no foam formed

    Change: Add the air earlier and keep the tip nearer the surface for longer at the start.

    Air can only be incorporated while the milk is cold; once it warms, the proteins no longer trap it the same way.

  • Large visible bubbles

    Change: Submerge the tip sooner and spend longer on the whirlpool.

    The spinning phase is what breaks big bubbles down. Cutting it short leaves them intact.

  • Foam sits as a stiff layer on thin milk

    Change: Add less air and make sure the whirlpool is genuinely turning the whole jug.

    Air that is not folded through the milk separates out as a distinct layer.

  • Milk tastes flat or cooked

    Change: Stop several degrees earlier.

    Overheating drives off the sweetness and coarsens the texture, and neither returns.

Common mistakes

  • Opening the steam valve gradually

    Weak steam heats the milk without texturing it.

    Instead: Open fully and immediately.

  • Chasing the whirlpool by moving the jug about

    The spin never establishes and the texture stays coarse.

    Instead: Find the position where it spins and hold it still.

  • Steaming milk in advance

    Foam and liquid separate within a minute and cannot be recombined.

    Instead: Steam it when the shot is ready and pour immediately.
