Change the taste
The same coffee can taste different depending on grind, dose, water, time, temperature and the machine you use. This page explains what to change, why, what to expect, and what trade-off each change creates — one variable at a time.
Strength and extraction aren't the same thing
Strength is how concentrated the coffee is — mostly a function of how much coffee and water you use. Extractionis how much of the coffee's soluble flavour actually dissolved into the water — mostly a function of grind size, temperature, time and agitation. A coffee can be strong and under-extracted (sour and thin, but intense) or weak and over-extracted (bitter, but faint). This is why the fix for "too strong" is usually water, not a coarser grind, and the fix for "sour" is usually more extraction, not more coffee.
- Stronger does not always mean more bitter — a strong, under-extracted shot can still taste sour.
- Sour does not always mean under-extracted — channelling (water finding a fast path through the grounds) can taste sour even at a correct grind.
- Bitter does not always mean over-extracted — a very dark roast, stale beans, or a dirty machine can all taste bitter at a technically correct recipe.
- Different beans need different settings — a very light roast usually needs more extraction effort than a dark roast at the same recipe.
- Grind is usually the first thing to change, because it's the most controllable variable with the least downside.
Change one thing at a time
Guessing at several changes simultaneously makes it impossible to tell what actually helped. Use this sequence for any method or machine:
- Return to a known recipe or machine setting.
- Identify the clearest taste problem — pick one word for it (sour, bitter, weak…).
- Pick the single most likely variable to change (the cards below suggest one).
- Make a small adjustment — one grinder step, a gram of dose, 5-10 seconds of time.
- Keep everything else the same.
- Taste, and only then decide whether to adjust again.
- Reset to the last known-good recipe if a change makes things worse or confusing.
A practical adjustment size is deliberately vague above — one click on one grinder can be a very different change from one click on another. Treat the first change as a small nudge, not a big swing, and re-taste before going further.

Tastes sour

If the coffee is a light roast, expect to need more extraction effort than a medium or dark roast at the same recipe.

Tastes harsh or dry

Check for channelling first (water finding a fast path through the bed) — that can taste sour even with a correct grind, and the fix is even pouring, not a finer grind.

Tastes inconsistent

"Strong but sour" is not fixed by pulling less coffee — it needs more extraction (finer grind, longer yield or a touch more heat), then dilute afterwards with water if it's too intense.

I changed beans and now it tastes wrong
Different beans genuinely need different settings — this isn't a sign you did anything wrong. As a starting point (not a guarantee):
- For more chocolate, caramel or classic espresso character: medium-to-darker roasts and blends tend to lean this way.
- For more fruit, floral notes or clarity: lighter roasts, washed or carefully selected natural coffees, and filter methods tend to show this more clearly — often needing slightly more extraction (finer grind, longer time or a little more heat) to taste balanced rather than sour.
- For more body: darker roasts, natural processing, immersion methods (French press, AeroPress) and metal filters tend to add body.
- For less bitterness: avoid very dark roasts, avoid over-extracting, and don't leave coffee sitting on a hotplate.
These are tendencies, not guarantees, and they don't hold for every farm, lot or roaster — see beans, roasting and processing for the full picture, including where the evidence is genuinely uncertain.
I don't know which setting to change
Start with grind size — it's the single most controllable variable across every method here, and rarely makes things worse if you move it a small step at a time.
