Safety
Roasting involves high temperatures, hot beans, a great deal of smoke, and chaff, which is dry and flammable. Roast only in a well-ventilated space using equipment designed for roasting, never leave a roast unattended, and empty the chaff collector after every batch. CoffeeHQ does not describe adapting other appliances for roasting: modifying an appliance to work outside its design creates electrical and fire risks that no coffee result justifies.

Charge temperatures, batch sizes, cooling procedure and cleaning are specific to each roaster. Follow its instructions rather than a general profile.
Why it works this way
Roasting is the largest single transformation coffee undergoes and the one most within your control if you do it yourself. It is also a skill with a real learning curve: early home roasts are usually worse than bought coffee, and the honest reason to start is that the process is interesting rather than that it saves money or immediately improves the cup. What a roast does is drive moisture out of a dense green seed and then let heat drive chemistry inside it. Three phases follow one another without hard boundaries: drying, where water leaves; browning, where the Maillard reactions and caramelisation that create most coffee flavour begin; and development, the stretch after first crack where the character established in browning either resolves or is pushed past. Nearly every early mistake is in the last of those.

How to do it
Set up somewhere well ventilated, and clear the area of anything flammable.
Roasting produces a great deal of smoke and sheds chaff, which is dry and burns readily. This is not optional preparation.
Weigh the green coffee and note the weight.
Weight loss across the roast is the single most useful number you can record, and it needs a before as well as an after.
Preheat the roaster as its instructions specify, then charge the beans.
Beans hitting a cold roaster stall; beans hitting an overly hot one scorch. The manufacturer's charge temperature exists for this.
Drying phase: the beans lose moisture, turn from green to yellow, and smell of hay or bread.
Nothing much of flavour is happening yet, but rushing this phase is what causes underdeveloped roasts later.
Browning: the colour deepens and the smell turns toasty and sweet.
Maillard reactions and caramelisation are generating most of what will become coffee flavour. Chaff separates and blows off around here.
First crack: an audible cracking, like quiet popcorn, as internal pressure splits the beans.
The landmark everything else is timed against. From here the coffee is nominally drinkable, and what you do next decides its character.
Development: continue past first crack for as long as the roast you want requires, listening for the cracking to slow.
A short development leaves sharp, grassy, underdeveloped coffee. A long one flattens acidity towards roast character. There is no correct answer, only a choice.
Drop the beans and cool them as fast as you can.
Beans carry enough heat to keep roasting themselves. Cooling within a couple of minutes is the difference between the roast you chose and one several shades darker.
Weigh the roasted coffee, record the loss, and rest it before brewing.
Freshly roasted coffee is full of carbon dioxide and brews unpredictably. Most people rest for several days to a fortnight, and espresso usually wants longer than filter.
How to tell it worked
An even colour across the batch, no scorched faces or blackened edges, and — after resting — a cup that tastes of coffee rather than of grass or of ash.

The coffee tastes grassy, sharp or vegetal
Change: Extend the development after first crack on the next batch.
Underdevelopment leaves the reactions that produce sweetness and body unfinished.
The coffee tastes flat, dull and papery despite being fresh
Change: Reach first crack sooner, and shorten the total roast.
A roast that stalls or crawls through browning bakes the coffee, driving off aromatics without developing sweetness. Baking is not fixable afterwards.
The coffee tastes of ash or burnt toast
Change: Drop earlier, and cool faster.
Roast character has overwhelmed origin character, and residual heat after dropping may be adding to it.
Beans are unevenly coloured within one batch
Change: Reduce the batch size and check the beans are moving freely.
An overloaded roaster cannot keep every bean in the same heat, which is what produces scorched faces beside pale ones.
Common mistakes
Chasing a colour rather than a process
Two roasts the same colour can taste completely different depending on how they got there.
Instead: Record the times of each phase. Colour is one output of the roast, not a description of it.
Cooling slowly
The beans keep roasting in the tray, and the roast you tasted is not the one you dropped.
Instead: Move air through them immediately.
Brewing the same day
Unpredictable, gassy brewing that tells you nothing about the roast.
Instead: Rest it, and taste the same batch across a fortnight.
