Why it works this way
Freshly roasted coffee holds a considerable amount of carbon dioxide, and hot water drives it out abruptly. If the main pour begins while that is happening, the escaping gas keeps water away from the grounds and the bed rises and cracks unevenly. Blooming deals with it deliberately: wet everything with a small amount of water, wait while the bed swells and subsides, then brew into a settled bed. The visible swelling is where the name comes from, and its absence is a reliable sign the coffee is not fresh.

How to do it
Pour roughly twice the coffee's weight in water, evenly across the bed.
Enough to wet everything, not enough to start the brew running through.
Stir gently, or swirl the brewer, to wet any dry pockets.
Dry grounds do not extract at all, and they are common at the edges without a stir.
Wait while the bed rises and then settles.
Thirty to forty-five seconds is usual. Very fresh coffee may need longer.
Begin the main pour into a settled bed.
The bed should have stopped swelling and the surface should look wet and level.

A visibly swelling bed with fine bubbles, followed by an even, unhurried main pour and a cup without the sharp edge that gassy coffee produces.

The bed barely rises
Change: Nothing to fix in technique — the coffee is older, so shorten the bloom.
The bloom is carbon dioxide leaving. Older coffee has less to lose.
The bloom overflows
Change: Use less water and pour it more gently.
Very fresh coffee expands a great deal.
Dry patches remain after the bloom
Change: Stir or swirl during the bloom rather than only pouring more water.
Water follows the path it already made; agitation is what reaches the rest.
Common mistakes
Using too much bloom water
The brew starts running through before the gas has left.
Instead: About twice the coffee weight is a good starting point.
Blooming for a fixed time regardless of the coffee
Old coffee sits doing nothing; very fresh coffee is still gassing when the pour starts.
Instead: Watch the bed rather than the timer.
