Storage and freshness, by format
How freshness affects taste, and how to store every coffee format — beans, ground, instant, pods, concentrates and more.

Why freshness matters
Roasted coffee releases carbon dioxide and gradually loses aromatic compounds over time. Coffee brewed from very fresh (under-rested) beans can taste unevenly, while coffee brewed from stale beans typically tastes flat and less aromatic.
A practical window
Many roasters and brewers consider roughly 1-4 weeks after roasting a practical window for most brewing methods, though this varies by roast level, bean and personal preference.
Roasted whole beans
Store in an airtight, opaque container at room temperature, away from heat, light and moisture. Grinding just before brewing preserves more aroma than buying pre-ground coffee.
Ground coffee
Stales faster than whole beans because of the much greater surface area exposed to oxygen. Buy smaller quantities more often if you must buy pre-ground, and keep it airtight, dark and cool the same as whole beans.
Green (unroasted) coffee
Stores much longer than roasted coffee — many months to over a year in a cool, moderate-humidity environment, in breathable-but-protective packaging (e.g. GrainPro-style liners) — but still slowly loses quality ("ages") over long storage, especially in poor conditions.
Instant coffee
Its very low moisture content gives it a long shelf life — often a year or more, sealed, in a cool, dry place. Once opened, keep it tightly sealed and away from humidity, which can cause clumping and gradual flavour loss.
Pods and capsules
Individually sealed with an oxygen barrier, giving each pod a long shelf life unopened — check the manufacturer's best-before date. Once opened/pierced, use promptly, as the single-serve seal is designed for one use.
Cold-brew concentrate and other concentrates
Homemade cold-brew concentrate is perishable — refrigerate and use within about 1-2 weeks. Commercially bottled, pasteurised concentrates and RTD products follow their own printed use-by dates, a different food-safety category from homemade concentrate — see CoffeeHQ's ready-to-drink guide.
Brewed coffee and espresso
Best consumed soon after brewing — flavour degrades within tens of minutes to a few hours as it cools and continues to slowly oxidise, faster on a hotplate (see CoffeeHQ's filter-machine Change the Taste guidance for the hotplate-staleness effect specifically).
Milk drinks
Best consumed fresh — texture and temperature (and therefore perceived sweetness) degrade quickly once steamed milk cools or separates.
Frozen coffee
Whole beans (not ground) in a genuinely airtight container can be frozen for longer-term storage; portion before freezing to avoid repeatedly thawing and refreezing the whole batch, which introduces condensation and accelerates staling. Decaf
Decaffeination's effect on bean structure is associated with somewhat faster staling once roasted — see CoffeeHQ's decaf guide. Buy smaller quantities more often than you might for caffeinated beans of the same roast.
Why the fridge isn't a good place for beans
A fridge's humidity and the condensation that forms each time a container is removed and returned introduce moisture — a genuine freshness risk — and beans can absorb odours from other food. A cool, dark cupboard is generally better than the fridge for roasted coffee (see CoffeeHQ's fridge-storage myth entry); the freezer, used correctly per the guidance above, is a different and more defensible case for long-term-only storage.
