Why it works this way

Cupping is a comparison protocol rather than a way of making a nice drink. Everything about it — the same grind, the same dose, the same water, no filter, no pouring technique — exists to remove every variable except the coffee itself. That is why the coffee is simply steeped in a bowl: any brewing method would introduce its own character and its own chance of error. There are two versions, and conflating them is why home cupping often feels pointlessly fussy. The professional protocol is standardised so that scores are comparable between people in different countries, and it specifies vessel volumes, ratios, water and timings precisely for that reason. Home comparative cupping borrows the shape and drops the calibration: identical bowls, identical everything, several coffees, one person. The second is genuinely useful and needs no certification.

How to do it

  1. Set out identical bowls or wide cups, one per coffee, and weigh the same dose into each.

    Identical vessels matter more than which vessels. A coffee in a different bowl is a coffee with a different variable.

  2. Grind each coffee at the same setting, coarser than filter, grinding directly into its bowl.

    Purge a little of each coffee through the grinder first, so the previous coffee is not in the next bowl.

  3. Smell the dry grounds in each bowl before adding any water.

    Fragrance. Differences are often clearer dry than they will be in the cup.

  4. Pour hot water into every bowl, saturating all the grounds, and leave them undisturbed.

    A crust of grounds forms on the surface and holds the aroma underneath it. Do not stir.

  5. Break the crust: push it back with the spoon while putting your nose over the bowl.

    This is the aromatic peak of the whole exercise, and it is brief. Break each bowl in turn, rinsing the spoon between them.

  6. Skim the foam and floating grounds off the surface with two spoons.

    What is left is a clear liquid above a settled bed.

  7. Wait for it to cool to a comfortable temperature, then taste by slurping sharply from the spoon.

    Slurping sprays the coffee across the palate and lifts aroma into the nasal passage. It is not affectation; it is the mechanism.

  8. Taste around the table repeatedly as the coffees cool, rinsing the spoon between bowls.

    Sweetness and acidity emerge as the temperature drops. A coffee that seemed unremarkable hot often is not.

How to tell it worked

A clear ranking of which coffee is sweeter, cleaner, more acidic or more interesting than which — arrived at under conditions where the coffee is the only thing that differed.

If it did not work

  • The bowls taste muddy

    Change: Grind coarser and skim more thoroughly.

    Fines left in suspension carry bitterness and mask everything finer.

  • Everything tastes the same

    Change: Cup coffees that are genuinely different — two origins or two processes, not two roasters' takes on the same thing.

    Comparative tasting needs a difference large enough to perceive before it can teach anything.

  • The aroma at the break is gone before you reach the third bowl

    Change: Break fewer bowls at a time.

    The aromatic release at the break is brief. Three or four bowls is a comfortable table for one person.

Common mistakes

  • Treating a home cupping as a score

    A number that means nothing, because scoring exists to make judgements comparable between calibrated professionals.

    Instead: Rank the coffees against each other and describe why. That is the useful part and it needs no certification.

  • Using different vessels

    Shape and thickness change temperature and aroma, so the vessels become a variable.

    Instead: Identical bowls, identical fill.

  • Not rinsing the spoon between bowls

    Each coffee carries a little of the last one.

    Instead: Rinse in hot water between every bowl.
