What it is

Cupping is the standardised tasting protocol the trade uses to evaluate coffee: identical grounds, identical water, identical steep, tasted side by side. The spoon is shaped for that job — deep enough to lift a full mouthful, wide enough to aerate it when slurped sharply, and usually silver-plated or stainless so it contributes no taste of its own.

How it works

The bowl's width spreads the coffee across the palate when drawn in with air, which lifts aroma into the nasal passage. That is the mechanical reason cuppers slurp rather than sip.

Why people use one

Comparability. The protocol only works if everything except the coffee is held constant.

Separated by what it affects, because “improves your coffee” is not something you can act on. Where the evidence is thin or contested, it says so.
