Why it works this way
Milk drinks are frequently served too hot at home, and the cost is not obvious because nothing looks wrong. What changes is taste and texture: the gentle sweetness that well-steamed milk develops falls away, the foam coarsens, and the drink tastes vaguely cooked. Published ranges differ between sources and between cafés, and CoffeeHQ does not assert a single correct number — what is consistent across them is that the useful window ends well below boiling, and that overheating is not recoverable. The practical answer is to calibrate your hand once with a thermometer and then stop using it.

How to do it
Keep your free hand on the side of the jug throughout steaming.
A thin-walled jug transmits the milk's temperature to your palm within a second or two.
Stop when the jug becomes uncomfortable to hold rather than merely warm.
That threshold falls in roughly the right region for most people, which is why it is the standard café method.
While learning, check with a thermometer immediately after stopping.
Checking afterwards calibrates you without dividing your attention during the drink. A week is usually enough.
Steam plant milks a little less far than dairy.
Several plant-milk manufacturers advise a lower ceiling, and splitting risk rises with temperature. Follow the carton.
