Why it works this way

Plant milks do not foam the way dairy does, because they mostly lack the protein structure dairy foams with. What foam they produce comes largely from what the manufacturer added. That single fact reorders the troubleshooting: with dairy, a bad result usually means your technique; with plant milk, it very often means a carton formulated for cereal rather than for a steam wand. Once the right product is in the jug, the technique differs from dairy in only two respects — less heat, and less time spent adding air.

How to do it

  1. Start with a barista formulation if one exists for that milk.

    This is the step that decides the outcome. Barista oat and standard oat behave like different liquids.

  2. Add air briefly — noticeably less than you would with dairy.

    Plant-milk foams are more fragile, and over-aerated plant milk collapses rather than settling.

  3. Spend proportionally longer on the whirlpool.

    Shearing is what makes the fragile foam fine enough to hold together for the pour.

  4. Stop lower than you would with dairy.

    Splitting risk rises with temperature, and most plant milks taste thinner when pushed hot.

  5. Pour the espresso into the milk, or pour the milk in promptly, rather than letting a hot shot stand.

    Curdling happens when plant proteins meet heat and acid together. Reducing either reduces the risk.

    Change: Switch to a barista formulation of the same milk.

    Foam persistence in plant milks depends on added fats and stabilisers that standard products do not carry.

  • Visible flecks or curdling against the espresso

    Change: Lower the milk temperature, try a lower-acidity coffee, and combine them sooner.

    Heat and acidity together destabilise plant proteins; soy is the most susceptible.

  • Milk tastes thin and watery in the cup

    Change: Try a different base — oat and soy carry more body than almond or coconut.

    Body comes largely from what is actually dissolved and suspended, which varies enormously between bases.

  • Blaming your technique for a standard carton

    Weeks of practice against a milk that cannot do what is being asked of it.

    Instead: Test with a barista formulation once, to separate the two variables.

  • Steaming plant milk as hot as dairy

    Thin texture, flat taste, and a much higher chance of splitting.

    Instead: Stop earlier, and follow the carton's guidance where it gives any.
