Brewing vessel
Olleta
Also known as: olleta cafetera, Colombian coffee pot, greca de olleta
A tall, narrow-mouthed pot — usually aluminium, sometimes enamelled — used across Colombia to boil coffee directly with panela or sugar and then pour it off the settled grounds. The narrow mouth and the height are what make it work without a filter: grounds have a long way to settle and the pour comes off the top. It is a boiling vessel rather than a brewer in the modern sense, and nothing about it is proprietary or standardised.
