South Indian coffee filter
Also known as: Indian filter, kaapi filter, Madras filter, coffee filter drip pot, decoction filter
A two-chamber stainless steel or brass filter. Ground coffee goes in the upper cup, which has a perforated base, and is pressed down with a plunger disc; hot water poured on top drips through slowly into the lower chamber as a concentrated decoction, typically over ten to twenty minutes. The decoction is not the drink — it is mixed with hot milk and sugar afterwards, which is why the filter is sized in decoction rather than in cups.
