What it is
A mat gives the portafilter spout somewhere to sit so the basket is horizontal and the handle is supported. Tamping on a bare worktop means either resting the spouts on the surface, which marks both, or holding the portafilter at an angle, which is the most common reason a tamp is not level.
How it works
It is a shaped pad. The corner variety wraps a worktop edge so the handle overhangs.
