Safety
A pressure device holding near-boiling water. Never attempt to open one while it is under pressure, and follow the manufacturer's instructions for pressure release.
What it is
A small pressure vessel you operate yourself. Hot water is added, a basket of finely ground coffee is fitted, and pumping or levering pressurises the water through the puck. The good ones genuinely reach espresso pressures and produce a shot with crema; what they cannot do is hold a stable brewing temperature or a stable pressure profile, both of which are the espresso machine's real contribution.
How it works
A hand pump or a lever multiplies your effort into hydraulic pressure. Water is heated separately, so brew temperature is whatever you poured in, minus what the device absorbs.
Why people use one
Espresso while travelling, camping or at a desk, without a machine or a socket.
What this actually changes
Separated by what it affects, because “improves your coffee” is not something you can act on. Where the evidence is thin or contested, it says so.
Convenience
Real differenceEspresso somewhere an espresso machine cannot go.
Consistency
BarelyReasoned, not measuredTemperature and pressure both depend on you and on the ambient conditions, so shot-to-shot variation is larger than on a machine.
Taste
DependsReasoned, not measuredCapable of good espresso with a good grinder and preheating. Compared honestly, it is not a substitute for a temperature-stable machine.
Who it is for
Worth having if
- Anyone who wants espresso while travelling
- Anyone with no room or no budget for a machine who is willing to work for the shot
Probably skip it if
- Anyone with a working espresso machine
- Anyone without a grinder capable of espresso, since these need one as much as any machine does
Using it well
- Preheat the device with hot water and discard it — an unheated body pulls heat out of the shot
- Grind, dose and tamp as you would for a machine
- Build pressure smoothly rather than in bursts
Cleaning and care
Rinse and dry after use, particularly the seals; leaving a wet puck in place degrades the gasket.
What you could use instead
How to use it
Step-by-step techniques this equipment is part of.
- Tamping espressoCompress the coffee bed into a level, uniformly dense puck, without introducing a slope or a crack.
- Preheating a brewerStop cold equipment taking heat out of the brew before it has finished extracting.
- Dialling in espressoFind the grind setting and recipe that make a particular coffee taste as intended, and be able to return to it.
When it goes wrong
