What it is

Coffee is overwhelmingly water, so what the water carries matters. A filter jug is the least involved way to change it: a carbon and ion-exchange cartridge that removes chlorine taste and reduces some of the calcium and magnesium responsible for hardness. It is not a precision instrument and does not let you specify a water composition, but for most households on hard, chlorinated supplies it is a real and cheap improvement.

How it works

Activated carbon adsorbs chlorine and organic compounds that carry taste and smell. An ion-exchange resin swaps some hardness minerals for sodium or hydrogen ions, lowering hardness by an amount that varies with the cartridge's age and the water going in.

Why people use one

Because chlorinated water tastes of chlorine in the cup, and because scale in a kettle or espresso machine comes out of hard water.
