Vietnamese phin coffee
A small metal filter sits on the glass and drips a very concentrated brew directly onto sweetened condensed milk, which is then stirred through and usually poured over ice.

What it is
The phin is a four-part metal filter — chamber, perforated base, press disc and lid — that sits on top of the glass the coffee will be drunk from. Grounds go in, the disc goes on top, a little water wets the bed, and then the chamber is filled and left to drip. It takes four to six minutes and produces a small volume of dense, dark coffee, which lands directly on the layer of sweetened condensed milk already in the glass.
The combination is not incidental. Vietnamese coffee is overwhelmingly robusta, roasted dark, and brewed to a concentration that is uncompromising on its own; condensed milk was originally the practical answer to fresh milk being scarce, and it turned out to balance that coffee unusually well. Stirred together and poured over ice, it becomes cà phê sữa đá, which is what most people outside Vietnam mean by Vietnamese coffee.
The drip rate is the brewer's only real control, and it is set by how hard the press disc is screwed or pressed down. Too loose and the water runs straight through; too tight and it stalls. Everything else — dose, grind, water — is fixed by the device.
What makes it distinct: The filter brews directly into the serving glass, onto the milk. There is no separate brewing vessel at any point.
Cultural context
Coffee is a street-level daily habit in Vietnam, drunk sitting on low plastic stools, and the phin arriving still dripping is part of the service rather than a delay. Vietnam is also the world's largest robusta producer, so the coffee in the glass is a domestic product in a way it is not in most consuming countries.

How it is made
Water passes down through a grounds bed held by perforated metal.
No heat is applied to the phin at all; the water is boiled elsewhere. The brew cools noticeably during the drip, which is one reason iced serving suits it.
- Put sweetened condensed milk in the bottom of the glass — roughly two to three teaspoons for a standard serving.
- Set the phin on the glass, add the grounds, level them and fit the press disc, pressed down more firmly for a slower drip.
- Pour a small amount of hot water to wet the bed and let it bloom. (about 45 seconds)
- Fill the chamber, fit the lid, and leave it to drip undisturbed. (about 5 minutes)
- Lift the phin off, stir the coffee and condensed milk together thoroughly.
- Pour over a glass of ice for cà phê sữa đá, or drink hot as cà phê sữa nóng.

What the method does
A slow gravity drip through a deep bed at a high dose gives a very concentrated brew, and the metal plate passes oils that paper would hold back — so body is high and the texture is heavier than a pour-over at the same strength. Nothing about the device produces bitterness; the concentration and the roast do.
What the tradition does
Robusta, roasted dark and sometimes roasted with butter or other additions, gives a heavy, chocolatey, distinctly bitter cup with almost no acidity. Condensed milk brings a large amount of sugar and dairy fat, which is why the result reads as balanced rather than punishing.
What the method does not control
Brewing an arabica in a phin gives a completely different and much lighter drink. The characteristic taste of Vietnamese coffee is mostly the bean and the roast, not the filter.

Caffeine
High on both counts, and this is the one preparation in the atlas where the folk belief that it is strong is straightforwardly correct — not because of the filter, but because 15-25 g of robusta carries roughly twice the caffeine per gram of the same weight of arabica. A phin serving can plausibly exceed a large filter coffee despite being a fraction of the volume.
CoffeeHQ states no milligram figure for this preparation, because no measurement specific to it has been established. Inventing one would be easy and wrong.

The arabica/robusta difference is well established; a specific milligram figure for a phin serving is not, and none is given.
How it differs from
- V60 (pour-over)
- Both are gravity brews, but a V60 is poured actively over three minutes at around 60 g/L through paper; a phin is filled once and left for five or more minutes at roughly three times that concentration through metal. The phin cup is far heavier and passes oils the paper would remove.
- Moka pot
- Similar concentration, entirely different mechanism: the moka pot uses steam pressure and heat under the vessel, the phin uses gravity alone with no heat applied at all.
In practice
Common mistakes
- Grinding too fine, which stalls the drip
- Screwing the press disc down hard in the belief that tighter is better
- Skipping the bloom
- Substituting fresh milk for condensed and expecting the same drink
- Lifting the lid repeatedly, which cools the brew
Household and regional variation
Dose, press tightness and condensed milk quantity vary freely; the phin's size fixes the rest.
Modern adaptations
Specialty roasters now sell arabica intended for the phin, which produces a lighter, more acidic cup that some regard as a different drink entirely. Egg coffee, salt coffee and coconut coffee are all built on a phin base.
Misconceptions
- That the phin's metal filter is what makes the coffee strong. The dose and the robusta do that.
- That Vietnamese coffee must be sweet. Cà phê đen — black, unsweetened — is ordinary.
