Pulped natural

The cherry skin is removed like washed processing, but the mucilage is left on the bean and dried without fermentation in water, distinguishing it from honey processing mainly by drying method and regional convention. Most closely associated with Brazil, where it is sometimes called 'cereja descascada'.

Steps

  1. Depulping
  2. Drying with mucilage present (no water fermentation)
Typical duration
7-12 days

Possible flavour influence

  • often described as combining some natural-process sweetness with more clarity than a full natural

Inferred, not independently verified — Terminology for pulped natural, honey and similar mucilage-retention methods varies by region and is not fully standardised across the industry.
