Which should you choose?
Both use the same double-shot espresso base, so the difference comes down to milk: a latte's larger volume of milk and thin foam make it milder and milkier, while a flat white's smaller volume of finely-textured milk gives a stronger, more concentrated coffee flavour. Neither is objectively better — it depends on whether a milkier, larger drink or a stronger, more compact one is preferred.
