What it is

A refractometer measures how much a drop of coffee bends light, which correlates with how much dissolved material it contains. Combined with the dose and the beverage weight, that gives an extraction yield — the percentage of the ground coffee that ended up in the cup. It is a real instrument doing a real measurement, and it is also the clearest example in this catalogue of a tool that is only useful to someone who will act on the number.

How it works

A small sample is placed on a prism and the refractive index measured. Coffee-specific units convert that reading to a total dissolved solids figure using an assumed relationship, then software or arithmetic turns TDS, beverage mass and dose into an extraction percentage.

Why people use one

To replace 'this tastes a bit thin' with a number that can be compared between brews, roasters and days, and to work out whether an unsatisfying cup is under-extracted or simply weak — two problems with opposite fixes.

What this actually changes

Separated by what it affects, because “improves your coffee” is not something you can act on. Where the evidence is thin or contested, it says so.

Coffee-specific or general purpose
A general Brix refractometer can be converted arithmetically but adds a step and an assumption at every reading.
Sample handling
Espresso must be cooled and usually filtered before measurement, or the reading is unreliable. Check what the instrument expects.

Common mistakes

  • Measuring hot coffee

    Readings drift and are not comparable.

    Instead: Cool the sample to the instrument's stated temperature range and calibrate with distilled water.

  • Chasing a target percentage rather than a taste

    Brews that measure well and taste worse than the ones being abandoned.
