What it is

Mechanically this is a French press used backwards: instead of pushing grounds down, the mesh disc is pumped up and down through milk to drive air into it. Some versions are stovetop-safe so the milk can be heated in the same vessel; most are not, and expect milk heated elsewhere.

How it works

Each stroke pushes milk through a fine mesh, shearing incoming air into small bubbles. The mesh is doing the same job the steam wand's whirlpool does — breaking large bubbles into small ones — which is why a pump frother produces a noticeably finer foam than a plain whisk, given enough strokes.

Why people use one

No electricity, nothing to break, and a finer foam than a battery whisk for a similar outlay. It is also quiet, which matters more than it sounds at six in the morning.

Using it well

  • Let it stand for half a minute so the largest bubbles settle before pouring

Cleaning and care

Dismantle the plunger and rinse the mesh after every use; dried milk in a mesh is unpleasant and difficult to shift later.
