Greek coffee

What it is
Greek coffee is the Greek practice within a preparation family that runs from the Balkans to the Levant: pulverised coffee, cold water and any sugar go into a briki together, are brought slowly towards the boil, and are poured — foam first — into a small cup without ever being filtered. What makes it Greek rather than generic is the surrounding convention rather than the physics. Sweetness is ordered as part of the drink's name, not added at the table, because the sugar is cooked with the coffee and cannot be stirred in afterwards. The foam (kaïmáki) is treated as the mark of a competent pour and is shared out between cups rather than kept for the first. The cup arrives with a glass of cold water, and it is expected to last a long time: this is a drink built around sitting down, not around being finished.
The name is younger than the practice. Coffee reached Greece through the Ottoman world and was called Turkish coffee in Greece within living memory; the shift to ellinikós kafés is documented as following the 1974 Cyprus crisis rather than any change in how the coffee is made. CoffeeHQ records the practice as Greek and the naming as contested, because both are true and neither cancels the other.
What makes it distinct: Sugar is a brewing variable rather than a table condiment: the sweetness level is fixed before the pot ever goes on the heat, and is spoken as part of the drink's name.
Cultural context
The kafeneío — the traditional neighbourhood coffee house — is where this preparation is most visible, and the pace of drinking is part of the point: a single cup can occupy an hour of conversation. Greek coffee coexists with, rather than having been displaced by, freddo espresso and frappé, which dominate younger and warmer-weather drinking; treating it as the only Greek coffee would be as wrong as treating it as extinct.
Etiquette
Drunk slowly. Draining the cup to the bottom is not done — the sludge is expected to be left — and refilling is a fresh briki rather than a top-up.
Heritage status
Greek coffee is not itself inscribed on the UNESCO Representative List. The related Turkish coffee culture and tradition was inscribed in 2013. Recorded here so the absence is explicit rather than looking like an oversight.

The pot is called a bríki in Greek. It is the same vessel family as the Turkish cezve and Bosnian džezva; the narrow neck concentrates the rising foam so it can be lifted off the heat at the right instant.

How it is made
The grounds are boiled or simmered in the brewing water itself.
A domestic briki normally goes on a hob. Slower, more even heat sources — hot ash, and the hot-sand hovoli found in kafeneía and tourist-facing cafés — are traditional alternatives, not requirements, and are covered separately.
- Measure cold water with the cup it will be served in, so the briki is filled to roughly the right level — one demitasse of water per cup, and no more than about two-thirds of the pot's capacity, or the foam has nowhere to rise.
- Add one heaped teaspoon of pulverised coffee per cup, and the sugar now if any is wanted: skétos, métrios or glykós is decided here and cannot be changed later.
- Stir while the water is still cold, until the coffee and sugar are wetted and dispersed. Stirring after heating begins collapses the foam.
- Heat slowly and without stirring. The surface will darken, then a ring of foam will climb the neck of the briki. (about 3 minutes)
- Lift the briki off the heat as the foam reaches the rim and before it breaks. Some households return it briefly to raise the foam a second time; others consider that a way of boiling the coffee and spoiling it.
- Pour, sharing the foam between the cups rather than giving it all to the first, and let the cup stand a minute so the grounds settle before drinking.
- Sugar
- Cooked with the coffee, never stirred in afterwards — which is why sweetness is part of the order. Skétos is unsweetened, métrios roughly one teaspoon per cup, glykós roughly two. Intermediate orders exist regionally.
- Milk
- Milk is not traditional and would be unusual to ask for. This is not a rule about strength but about the preparation: there is no clean liquid to add milk to, only coffee sitting on its own sediment.
- Foam
- The kaïmáki foam is the visible test of the pour. It forms from the coffee's own colloids as the brew approaches boiling and collapses if the pot boils properly, is stirred while heating, or is poured carelessly.
- Reheating
- Contested within Greece itself rather than settled. Returning the briki to the heat once more after the first rise is common practice in some households and considered a fault in others; extended or repeated boiling is agreed by both to make the cup harsh.
- Pouring
- Poured in one continuous movement from low over the cup, with the foam distributed across all cups being served.

What the method does
Nothing filters the cup, so fines and oils that a paper filter would remove stay in it. That is most of the difference a drinker notices against filter coffee: heavier body, muted clarity, a silty texture towards the bottom, and a long finish. Heating the brew rather than steeping it also pushes bitter compounds harder than a lower-temperature method would, which is why overheating is the classic fault.
What the tradition does
Greek coffee is habitually made from medium to dark roasts ground to a powder, which tends towards chocolate and toast rather than fruit. Where sugar is cooked in, it does not just sweeten — it slightly changes the boiling behaviour and the perceived body.
What the method does not control
The method controls texture, sediment and how hard bitterness is pushed. It does not control origin character: the same briki with a washed Ethiopian and with a dark Brazilian produces two very different cups, both unmistakably Greek coffee.

Caffeine
High concentration, modest total. A Greek coffee is strong in the sense that matters to the tongue — a lot of dissolved coffee in a very small volume — and unremarkable in the sense that matters to a stimulant dose, because 5-7 g of coffee is less than a typical filter brew's 15-18 g. A large mug of filter coffee will usually contain more caffeine in total than a demitasse of Greek coffee, while tasting far less intense.
CoffeeHQ states no milligram figure for this preparation, because no measurement specific to it has been established. Inventing one would be easy and wrong.

The dose and serving size are conventional and can be reasoned from; the caffeine content of the resulting cup cannot be, because extraction yield in an unfiltered boiled brew is not documented.
How it differs from
- Espresso
- Both are small and concentrated, and there the similarity stops. Espresso is a pressure extraction through a filter, finished in under half a minute, with no grounds in the cup. Greek coffee is a slow boiled decoction with the grounds still in it. The espresso is cleaner and more aromatic; the Greek coffee is heavier and grittier and lasts far longer.
- Filter coffee
- Paper removes oils and fines, producing clarity and a lighter body; Greek coffee removes nothing. A filter cup is typically five to ten times the volume at a fraction of the concentration, and usually carries more total caffeine despite tasting milder.
- Greek coffee in hot sand (hovoli)
- Not a different coffee — a different way of heating the same briki. Sand transfers heat more evenly and more slowly than a flame, which gives the operator finer control over the foam.
Contested and disputed
Where origin, ownership or naming is genuinely disputed, CoffeeHQ states the dispute rather than picking a side.
Whether this preparation is properly called Greek, Turkish or something else.
- In Greece it is ellinikós kafés; the name is reported to have displaced 'Turkish coffee' in general Greek usage after the 1974 Cyprus crisis, not because the preparation changed.
- In Türkiye it is Turkish coffee, and Turkish coffee culture is the form inscribed by UNESCO in 2013.
- In Cyprus it is kypriakós kafés, and in Bosnia, Serbia, Armenia and the Levant it carries other local names again.

- Stirring after the pot is on the heat, which collapses the foam that has not yet formed
- Filling the briki too full, so the foam has no neck to climb and boils over
- Adding sugar at the table, which cannot be done: it was a brewing decision
- Pouring immediately and drinking straight away, before the grounds have settled
Household and regional variation
Whether to return the pot to the heat for a second rise, whether to add a splash of cold water to settle the grounds faster, and exactly how heaped a heaped spoon is, all vary by household and are argued about in good faith.
Modern adaptations
Electric hovoli machines and dedicated briki hobs are common in cafés. Greece's most-drunk coffees are now the cold frappé and freddo espresso, which are separate drinks rather than versions of this one.
Misconceptions
- That Greek coffee must be made in hot sand. Sand is one heat technique among several and is not what makes the coffee Greek.
- That the sediment means the coffee was made badly. Unfiltered grounds in the cup are the design, not a fault.
- That a small strong cup necessarily carries more caffeine than a large mild one. Concentration and total dose are different quantities.
