Grinder burrs

Replacement intervals are usually quoted by weight of coffee ground and vary enormously by burr and by roast. Dulling coffee with no other explanation is the practical signal.

What it is

Burrs are the working part of every grinder worth owning, and a separate record because they are bought, replaced, aligned and argued about independently of the machine around them. The two common geometries are conical — a cone rotating inside a ring — and flat — two parallel rings facing each other. Almost everything written about the difference between them overstates what is known.

How it works

Beans are drawn into a narrowing gap and fractured progressively until the fragments are small enough to pass through. The gap sets the size at which particles escape; the geometry, sharpness and alignment determine how uniformly they get there.

Why people use one

Nobody buys burrs for their own sake at first. People come to them when a grinder needs new ones, when a grinder can be improved by aligning the ones it has, or when choosing between two grinders described only by their burr type.

What this actually changes

Separated by what it affects, because “improves your coffee” is not something you can act on. Where the evidence is thin or contested, it says so.

    Sharp, well-aligned burrs produce a narrower spread of particle sizes, and that spread is what determines how evenly the coffee extracts. Worn burrs progressively produce more fines and duller coffee.

Choosing one

What actually differs between them. No products, no rankings.

Flat or conical
Descriptions of a single characteristic flavour for each geometry are widespread and not well supported. What is reasonably established is that the two produce different particle-size distributions, and that many other variables in the grinder affect the result at least as much. Treat 'flat burrs taste like X' as a claim, not a fact.
Diameter
Larger burrs grind faster and run cooler for a given throughput. Below café volumes this matters less than it is made to sound.
Material
Hardened steel is the default. Ceramic holds an edge longer and chips if a stone gets in. Coated steel burrs claim longer life at a price premium.
Alignment
Frequently more consequential than which burrs are fitted. Some grinders can be shimmed into alignment; others cannot, and that is a property of the grinder, not the burrs.

Common mistakes

  • Treating burr geometry as a flavour setting

    Money spent chasing a taste description that the evidence does not support.

    Instead: Judge a grinder by what it does with your coffee, not by its burr type.

  • Washing burrs

    Steel burrs rust, and rust ruins them.

    Instead: Brush, or use a grinder-cleaning product intended for the purpose.

Cleaning and care

Brush out regularly. Grinder-cleaning tablets or granules will lift built-up oils; follow the product instructions and purge thoroughly afterwards.
