Japanese siphon coffee
A European nineteenth-century vacuum brewer that Japan adopted, standardised around its coffee houses and kept alive for a century after the rest of the world abandoned it.

What it is
The siphon is not a Japanese invention and this record does not present it as one. Vacuum brewers were patented in Europe in the 1830s and were widely made there and in the United States. What happened in Japan is different and more interesting: the design was adopted by kissaten in the early twentieth century, a domestic manufacturing industry grew up around it — Coffee Syphon Co. released a Japanese siphon in 1925, and Hario has continued making them since the 1980s — and the technique was refined into something a professional practises for years rather than a novelty a household owns.
What makes the kissaten version distinct is the discipline around a mechanism anyone can buy. The brewer works to a fixed sequence with a cloth filter that has to be kept wet, a stir when the water arrives so nothing floats dry, a second stir before the draw-down, and heat removed at a decided moment rather than when the coffee looks ready. Doses run higher and roasts darker than a European or American siphon user would expect. The glass is left visible on the counter because the process is part of what the customer is paying for.
So CoffeeHQ models this as two records. The brewing method covers the mechanism, which belongs to nobody. This covers what Japanese coffee-house practice made of it.
What makes it distinct: The brew separates itself from its grounds by a pressure difference rather than by gravity or by a plunger — and the operator's only real controls are when to stir and when to take the heat away.
Cultural context
The kissaten is a specific institution — quiet, often decades old, one person making every cup — and the siphon suits it for the same reason nel drip does: it is slow, manual and visibly skilled. Siphon competitions are run in Japan and the technique has a professional register that it has nowhere else. Its survival is not nostalgia: it never went away there, while it did almost everywhere else.

How it is made
Vapour pressure lifts water, which then falls back down through the grounds.
Traditionally an alcohol burner, which is easy to remove cleanly at the right instant; halogen beam heaters are the modern café choice and gas burners the cheap one. The heat source matters here more than in most methods, because taking it away is what triggers the draw-down.
- Fit the wet cloth filter to its plate, seat it in the upper chamber and hook the spring onto the tube so it sits centred.
- Fill the lower chamber with hot water — starting hot rather than cold shortens the climb and gives more control over the brew temperature.
- Seat the upper chamber squarely and apply heat. The water will climb the tube once vapour pressure builds. (about 90 seconds)
- Add the coffee and stir immediately so nothing floats as a dry crust on the surface.
- Let it steep with the heat held low and steady. (about 60 seconds)
- Stir once more, then take the heat away. The lower chamber cools, the air contracts, and the coffee is drawn back down through the cloth. (about 45 seconds)
- Lift the upper chamber off and serve. Rinse the cloth at once and return it to clean water.

What the method does
The unusual thing about a siphon is that it gets clarity and body at the same time, and that is a genuine consequence of the design rather than a claim. Full immersion at a stable temperature extracts evenly and efficiently — nothing is channelling past a bed — and the filter then removes the fines that would muddy it. Cloth passes oils that paper adsorbs, so body survives the filtration in a way it does not in a V60. Prolonged heating during the steep is the failure mode: the water is already near boiling and holding it there pushes bitterness hard.
What the tradition does
Kissaten practice runs darker roasts and higher doses than siphon users elsewhere, which moves the cup towards chocolate, depth and low acidity — much of what is attributed to 'siphon flavour' is attributable to that.
What the method does not control
Large. The method is unusually transparent and does very little to disguise what went in; a light Ethiopian through the same brewer produces a bright, floral cup that shares almost nothing with the kissaten style.

Caffeine
Comparable to a well-made filter coffee at the same ratio, in a slightly smaller serving. Full immersion at a high, stable temperature extracts efficiently, so a siphon probably gets a higher proportion of the available caffeine out of the same dose than a quick pour-over does — but the dose sets the ceiling, and the difference is a few per cent rather than a difference in kind.
CoffeeHQ states no milligram figure for this preparation, because no measurement specific to it has been established. Inventing one would be easy and wrong.

- Japanese nel drip
- The two kissaten signatures, and they are opposites in temperament. Nel drip is a hand pour where every second is the operator's; the siphon runs to a physical sequence the operator can only start and stop. Nel drip gives silkiness and muted acidity; the siphon gives clarity with body. Both use cloth, and both demand the same maintenance from it.
- V60 (pour-over)
- A pour-over percolates: water passes through a bed once, and unevenness in that bed is the main source of error. A siphon immerses fully, so extraction is even by construction, then filters. The siphon cup is usually rounder and fuller; the pour-over is more articulate and easier to adjust mid-brew.

- Washing the cloth with detergent, which it retains and passes to the next brew
- Not stirring when the water arrives, so a dry crust of grounds floats and never extracts
- Leaving the heat on through the steep, which cooks the brew
- Seating the upper chamber crookedly, so the seal leaks and the water never fully climbs
Household and regional variation
Dose, roast, grind and steep time vary between kissaten and are a matter of individual practice rather than convention; heat source varies from alcohol burner to halogen beam.
Modern adaptations
Halogen beam heaters, electric siphon brewers with automated cycles, and paper or metal filters in place of cloth. Specialty cafés outside Japan have adopted the method, usually with lighter roasts than kissaten practice.
Misconceptions

- That the vacuum extracts the coffee. The vacuum moves the finished coffee; the extraction happens by ordinary immersion in the upper chamber.
