Japanese nel drip

What it is

Nel drip is a pour-over through cloth. A piece of flannel is stretched over a wire hoop with a handle, held over a server, filled with a bed of coffee, and wetted by hand in slow concentric circles from a fine-spouted kettle. Practitioners keep the water level low and the pour continuous, often over several minutes, and a kissaten master will use a dose and a roast that would be considered extreme elsewhere — very dark, very high dose, very small yield.

The reason for the cloth is texture. Flannel holds back grounds like paper but passes the coffee's oils, so the cup has a weight and a silkiness that paper filtration removes by design. The character usually described is round, low-acid, thick and slightly sweet, which is as much a function of the roast style as of the filter.

The cloth is also the reason the method is rare outside Japan. It must be rinsed thoroughly and then stored wet — in water in the fridge, or frozen — because a dried flannel goes rancid from the oils it holds and will ruin the next brew. That is a real maintenance commitment, and it is why nel drip stayed a professional method.

What makes it distinct: A filter medium that must be kept permanently wet between uses, which turns brewing into an ongoing maintenance relationship with one piece of cloth.

Cultural context

The kissaten is a specific institution — a quiet, often decades-old coffee house where a single person makes every cup to order, and where the coffee is treated as the reason to be there. Nel drip suits that setting because it is slow, manual and visibly skilled. It coexists with siphon brewing, the other signature kissaten method.

How it is made

Water passes down through a grounds bed held by cloth, which lets oils through.

  1. Take the flannel from its water, wring it out and warm it, then fit it to the hoop with the napped side facing the direction the shop uses — a genuine point of disagreement between practitioners.
  2. Add the grounds and shape the bed so it sits evenly in the cloth.
  3. Wet the bed with a small pour and let it bloom. (about 40 seconds)
  4. Pour slowly in tight concentric circles, keeping the water level low and the flow continuous, over several minutes. (about 4 minutes)
  5. Stop the pour before the bed drains completely if a concentrated, low-yield cup is wanted.
  6. Rinse the cloth thoroughly with no detergent and return it to clean water in the fridge, or freeze it.

What the method does

Cloth passes oils that paper adsorbs, which is the mechanical basis for the fuller body and rounder mouthfeel nel drip is valued for. It still holds back fines, so the cup is clean rather than silty — cloth sits genuinely between paper and no filter at all, rather than being a version of either.

What the tradition does

Kissaten roasting tends dark and the brewing tends to a low temperature and a small yield, which suppresses acidity and emphasises sweetness and body. Much of what is attributed to the cloth is attributable to that combination.

What the method does not control

Very large here. The same cloth with a light Ethiopian at a normal ratio gives a bright cup that shares little with the dark, syrupy kissaten style.

Caffeine

Moderate to high concentration in a small serving. Kissaten practice often uses a high dose with a low yield, which raises concentration without necessarily raising the total in the cup — a small strong cup rather than a large one.

CoffeeHQ states no milligram figure for this preparation, because no measurement specific to it has been established. Inventing one would be easy and wrong.

How it differs from

V60 (pour-over)
Same gesture, different filter. Paper adsorbs oils and gives clarity and a lighter body; flannel passes them and gives weight and silkiness. Kissaten practice also runs darker roasts, lower temperatures and higher doses, so the two cups rarely resemble each other in practice.
Costa Rican chorreador
Both pour water by hand through cloth. The chorreador is a domestic bag on a stand brewing a jug at everyday ratios; nel drip is a hand-held hoop used to make one carefully controlled cup, usually to a much higher dose.

Common mistakes

  • Letting the cloth dry out between uses, which turns the oils in it rancid
  • Washing it with detergent, which the cloth retains
  • Pouring fast and flooding the bed, which loses the control the method exists for
  • Assuming cloth is simply a reusable paper filter — it behaves differently and needs different technique

Household and regional variation

Which side of the flannel faces the coffee, grind size, temperature and yield are all matters of individual practice, and shops differ deliberately.

Modern adaptations

Nel-style cloth filters are sold for home use, and some specialty cafés outside Japan have adopted them. Sales of pre-sewn nel filters have made the method more accessible without changing the maintenance requirement.

Misconceptions

  • That nel drip is a Japanese invention. Cloth filtration long predates it in several countries; what is Japanese is this particular refined technique and the kissaten culture around it.
  • That the smoothness comes from the cloth alone. The roast and the low brewing temperature do much of it.

  • Cloth against paper has not been measured in any controlled comparison CoffeeHQ has located. The mechanism stated above — cloth passes oils that paper adsorbs — is well established; the sensory consequences attributed to it are practitioner consensus rather than measurement, and no source establishes that either medium makes better coffee. Seven records in this atlas cite this mechanism and all of them rest on the same unmeasured foundation.
  • Dose, grind and temperature vary so much between kissaten that the ranges given describe a spread of practice rather than a convention.
  • The claim that flannel passes more oils than paper is mechanically well founded but CoffeeHQ has not located a controlled measurement of the difference.
  • Which side of the flannel should face the coffee is genuinely disputed among practitioners and is left open.
