Sweeter and less bitter-forward than a plain latte, since chocolate both adds sugar and masks some of the espresso's bitterness. Body is similar to a latte, with the chocolate adding a slightly thicker mouthfeel.
Common mistakes
- Using unsweetened cocoa powder and expecting the same sweetness as a syrup-based mocha — the two need different amounts of added sweetener.
- Adding chocolate to milk that's already very hot, which can make cocoa clump rather than dissolve smoothly.
- Treating it as a dessert drink with no coffee character — a mocha should still taste clearly of espresso, not just chocolate milk.
Chocolate format varies by café — some use chocolate syrup, others cocoa powder mixed with sugar, others melted chocolate — each gives a different sweetness and texture, and none is more 'correct' than the others.
