Safety
A cleaning chemical. Follow the product's instructions and safety information, keep it away from skin and eyes, never mix it with descaler or any other product, and never use a cleaning product your machine's manufacturer does not permit.
What it is
Coffee residue is oily and organic, so it is removed by an alkaline detergent. Scale is mineral, so it is removed by an acid. Using one for the other's job does not work and can damage the machine, which is why this record and the descaler record are separate and cross-reference each other. Cleaning detergent is used for backflushing, for soaking baskets and portafilters, and for cleaning brewers.
How it works
Alkaline salts and surfactants break down and lift coffee oils so they rinse away rather than polymerising into the varnish that builds up in a neglected group.
Why people use one
Because hot water alone does not remove coffee oil, and every espresso machine accumulates it.
